If you’re looking for a chicken salad that’s dangerously good but still lets you keep your jeans buttoned, you’ve found it. This Healthy Crack Chicken Salad is creamy, crunchy, a little sweet, a little tangy, and wildly addictive — like the kind of dish you “taste test” six times and somehow still need a full serving. And it has 30g of protein per serving! Made with juicy rotisserie chicken (from Publix, duh), Greek yogurt instead of mayo (so you can feel good about it), and a hit of lemony freshness, I can promise you it will be your new fridge obsession. I also love adding a little sweetness to my tuna and chicken salads so I’ve added fresh Honeycrisp Apples and Dried Cranberries. You’re going to love it.
Ingredients:
1 rotisserie chicken, shredded (I used Publix original rotisserie chicken and used both white and dark meat) * keep in mind that if you are only using white meat you will have less to work with, and thus should adjust amount of other ingredients*
1 ¼ cups Greek yogurt
1 ½ tablespoons Dijon mustard
1 lemon, zested and juiced
¼ cup parsley, chopped
2 tbsp dill (optional if you like it more herby)
½ Honeycrisp apple, diced
¼ cup dried cranberries
1 ½ teaspoons flaky sea salt
Freshly cracked black pepper, to taste
2 teaspoons agave
4 stalks celery, diced (about ½ cup)
Instructions:
In a large bowl, combine all ingredients.
Toss everything together until evenly coated.
Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
Serve chilled, piled into lettuce cups, sandwiches, wraps, with crackers— or just straight from the bowl.
